DESCRIPTION

This Dutch goat's milk gouda-style cheese is aged for 6 to 12 months.  While this cheese is sold under the California cheese maker's label, it is actual produced in the Netherlands.  With a buttery, slightly sweet flavor and caramel notes, this semi-firm cheese is a great alternative take on the classic cow's milk gouda.  Like with all Dutch goudas, it has a waxed rind and was made with vegetarian rennet.

STORAGE TIPS

Refrigerate preferably in its own drawer close to where most of the produce is kept.  After each time that you slice the cheese, re-wrap it with fresh plastic wrap to extend the shelf life.  While some chefs will freeze a slice of blue and then grate it over a salad before serving, Chef's Mandala doesn't recommend freezing cheeses in general.
