DESCRIPTION

Hand-made in the Loire valley, 4 generations of the Jacquin family have made this delicious cheese.  With a slightly tart tang indicative of goat's milk, these snow white cylinders are mild and friendly to first time tourists to cheese.  Aged for only a month, these fresh cheeses are best used on cheeseboards or in simple recipes that don't require cooking such as salads.

STORAGE TIPS

Refrigerate preferably in its own drawer close to where most of the produce is kept.  After each time that you slice the cheese, re-wrap it with fresh plastic wrap to extend the shelf life.  While some chefs will freeze a slice of blue and then grate it over a salad before serving, Chef's Mandala doesn't recommend freezing cheeses in general.
